Ingredients
- 2 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 onion, diced
- 2 clove garlic, minced
- 1 jalapeno pepper, seeded and minced
- 1 tablespoon ginger, minced
- 2 tablespoon biryani spice blend
- 1 cup basmati rice
- 2 cup chicken broth
- 1 cup frozen peas
- 1 cup chopped fresh cilantro
Instructions
- Preheat your air fryer to 400°F.
- Place the chicken cubes in a large bowl and drizzle with 1 tablespoon of the olive oil. Toss to coat the chicken with the oil.
- Place the chicken cubes in the air fryer basket in a single layer, making sure not to overcrowd the basket.
- Cook the chicken cubes for 10-12 minutes, flipping halfway through, until they are cooked through and caramelized.
- While the chicken is cooking, heat the remaining 1 tablespoon of olive oil in a large saucepan over medium heat. Add the onion, garlic, jalapeno, and ginger and cook until the onion is soft and translucent, about 5 minutes.
- Add the biryani spice blend and cook for 1 minute more.
- Stir in the rice, chicken broth, and peas and bring to a simmer. Reduce the heat to low and simmer for 10 minutes.
- Once the rice is cooked, remove the chicken cubes from the air fryer and add them to the saucepan with the rice. Stir to combine the chicken and rice.
- Transfer the biryani to the air fryer basket and cook for an additional 5-7 minutes, until the biryani is hot and bubbly.
- Serve the biryani hot, garnished with cilantro. Enjoy!
