Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch strips
  • 0.25 cup coconut milk
  • 2 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 tablespoon red curry paste
  • 2 clove garlic, minced
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon black pepper
  • 1 bamboo skewers, soaked in water for at least 30 minutes

Instructions

  1. In a small bowl, mix together the coconut milk, soy sauce, brown sugar, lime juice, red curry paste, garlic, cumin, coriander, and black pepper to make the marinade.
  2. Place the chicken strips in a large bowl and pour the marinade over them, making sure they are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or up to 24 hours.
