- 1 pound boneless, skinless chicken breasts, cut into 1-inch strips
- 0.25 cup coconut milk
- 2 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1 tablespoon red curry paste
- 2 clove garlic, minced
- 0.5 teaspoon ground cumin
- 0.5 teaspoon ground coriander
- 0.25 teaspoon black pepper
- 1 bamboo skewers, soaked in water for at least 30 minutes
Instructions
- In a small bowl, mix together the coconut milk, soy sauce, brown sugar, lime juice, red curry paste, garlic, cumin, coriander, and black pepper to make the marinade.
- Place the chicken strips in a large bowl and pour the marinade over them, making sure they are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or up to 24 hours.
