Apple Pie

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup unsalted butter, chilled and cubed
  • 0.25 - 0.5 cup ice water
  • 8 cup thinly sliced apples (about 8 medium apples)
  • 0.5 cup granulated sugar
  • 2 tablespoon all-purpose flour
  • 1 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 0.25 teaspoon allspice
  • 0.25 teaspoon ground ginger
  • 1 tablespoon unsalted butter, cut into small pieces
  • 1 egg, beaten (for egg wash)

Instructions

  1. To make the pie crust, in a large bowl, whisk together the flour, salt, and sugar. Add the chilled butter cubes and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse sand. Add the ice water, 1 tablespoon at a time, stirring with a fork until the dough comes together. Divide the dough in half and wrap each half in plastic wrap. Chill in the refrigerator for at least 1 hour.
  2. Preheat your oven to 375°F (190°C).
  3. In a large bowl, combine the sliced apples, sugar, flour, cinnamon, nutmeg, allspice, and ginger.
  4. On a lightly floured surface, roll out one half of the pie dough into a 12-inch circle. Transfer the dough to a 9-inch pie dish and press it into the bottom and up the sides.
  5. Pour the apple mixture into the pie crust and dot the top with the butter pieces.
  6. Roll out the remaining pie dough into a 12-inch circle. Cut the dough into strips and arrange them in a lattice pattern on top of the pie. Brush the top of the pie with the egg wash.
  7. Bake the pie for 1 hour, or until the crust is golden brown and the filling is bubbly.
  8. Remove the pie from the oven and let it cool on a wire rack before slicing and serving.
