Ingredients
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 cup unsalted butter, chilled and cubed
- 0.25 - 0.5 cup ice water
- 8 cup thinly sliced apples (about 8 medium apples)
- 0.5 cup granulated sugar
- 2 tablespoon all-purpose flour
- 1 teaspoon cinnamon
- 0.25 teaspoon nutmeg
- 0.25 teaspoon allspice
- 0.25 teaspoon ground ginger
- 1 tablespoon unsalted butter, cut into small pieces
- 1 egg, beaten (for egg wash)
Instructions
- To make the pie crust, in a large bowl, whisk together the flour, salt, and sugar. Add the chilled butter cubes and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse sand. Add the ice water, 1 tablespoon at a time, stirring with a fork until the dough comes together. Divide the dough in half and wrap each half in plastic wrap. Chill in the refrigerator for at least 1 hour.
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the sliced apples, sugar, flour, cinnamon, nutmeg, allspice, and ginger.
- On a lightly floured surface, roll out one half of the pie dough into a 12-inch circle. Transfer the dough to a 9-inch pie dish and press it into the bottom and up the sides.
- Pour the apple mixture into the pie crust and dot the top with the butter pieces.
- Roll out the remaining pie dough into a 12-inch circle. Cut the dough into strips and arrange them in a lattice pattern on top of the pie. Brush the top of the pie with the egg wash.
- Bake the pie for 1 hour, or until the crust is golden brown and the filling is bubbly.
- Remove the pie from the oven and let it cool on a wire rack before slicing and serving.
