Ingredients
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoon olive oil
- 1 onion, diced
- 2 clove garlic, minced
- 1 jalapeno pepper, seeded and minced
- 1 tablespoon ginger, minced
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 teaspoon garam masala
- 1 teaspoon paprika
- 0.5 teaspoon cayenne pepper
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 14 ounce can crushed tomatoes
- 1 cup coconut milk
- 2 tablespoon chopped fresh cilantro
Instructions
- Preheat your air fryer to 400°F.
- Place the chicken cubes in a large bowl and drizzle with the olive oil. Toss to coat the chicken with the oil.
- Place the chicken cubes in the air fryer basket in a single layer, making sure not to overcrowd the basket.
- Cook the chicken cubes for 10-12 minutes, flipping halfway through, until they are cooked through and caramelized.
- While the chicken is cooking, heat the olive oil in a large saucepan over medium heat. Add the onion, garlic, jalapeno, and ginger and cook until the onion is soft and translucent, about 5 minutes.
- Add the cumin, coriander, garam masala, paprika, cayenne pepper, salt, and pepper and cook for 1 minute more.
- Stir in the crushed tomatoes and bring to a simmer. Reduce the heat to low and simmer for 10 minutes.
- Stir in the coconut milk and simmer for 5 more minutes.
