Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2.3 cup all-purpose flour
- 4 large eggs
- 0.5 cup lemon juice (about 2 lemons)
- 1 tablespoon lemon zest
- 1 powdered sugar, for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
- In a large bowl, beat together the butter and half of sugar until light and fluffy. Gradually add the 2 cups of flour, stirring until well combined. Press the dough into the prepared pan and bake for 20 minutes, or until the edges are lightly golden.
- In a separate large bowl, whisk together the eggs, other half of sugar, 1/3 of flour , lemon juice, and lemon zest until well combined. Pour the mixture over the baked crust.
- Bake for an additional 20-25 minutes, or until the filling is set.
- Remove the lemon bars from the oven and let them cool in the pan. Once cooled, use the parchment paper to lift the bars out of the pan and transfer them to a cutting board. Cut into squares and dust with powdered sugar, if desired.
