Ingredients
- 2 medium eggplants, sliced into 1/4-inch rounds
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- 1 cup grated Parmesan cheese
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 cup marinara sauce
- 1 cup mozzarella cheese, shredded
Instructions
- Preheat your air fryer to 400°F.
- Set up a breading station by placing the flour in one shallow dish, the beaten eggs in another shallow dish, and the breadcrumbs mixed with the Parmesan cheese, salt, pepper, and garlic powder in a third shallow dish.
- Dip each eggplant slice in the flour, shaking off any excess. Then dip it in the eggs, allowing any excess to drip off. Finally, coat the eggplant slice in the breadcrumb mixture, pressing gently to make sure it sticks.
- Place the breaded eggplant slices in the air fryer basket in a single layer, making sure not to overcrowd the basket.
