Air Fryer Yellow Curry

Ingredients

  • 2 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 onion, diced
  • 2 clove garlic, minced
  • 1 jalapeno pepper, seeded and minced
  • 1 tablespoon ginger, minced
  • 2 tablespoon yellow curry paste
  • 14 ounce can coconut milk
  • 1 cup chicken broth
  • 2 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 sweet potato, cut into 1-inch cubes
  • 1 red onion, cut into 1-inch cubes
  • 2 tablespoon chopped fresh cilantro

Instructions

  1. Preheat your air fryer to 400°F.
  2. Place the chicken cubes in a large bowl and drizzle with 1 tablespoon of the olive oil. Toss to coat the chicken with the oil.
  3. Place the chicken cubes in the air fryer basket in a single layer, making sure not to overcrowd the basket.
  4. Cook the chicken cubes for 10-12 minutes, flipping halfway through, until they are cooked through and caramelized.
  5. While the chicken is cooking, heat the remaining 1 tablespoon of olive oil in a large saucepan over medium heat. Add the onion, garlic, jalapeno, and ginger and cook until the onion is soft and translucent, about 5 minutes.
  6. Add the yellow curry paste and cook for 1 minute more.
  7. Stir in the coconut milk, chicken broth, fish sauce, and sugar and bring to a simmer. Reduce the heat to low and simmer for 10 minutes.
  8. Stir in the sweet potato cubes and onion cubes and simmer for 5 more minutes.
  9. Once the chicken cubes and sweet potato cubes are cooked, remove them from the air fryer and add them to the saucepan with the sauce. Stir to coat the chicken and sweet potatoes with the sauce.
  10. Serve the yellow curry hot, garnished with cilantro. Enjoy!
