Air Fryer Stuffed Bell Peppers

Ingredients

  • 4 bell peppers, any color
  • 1 cup cooked quinoa
  • 1 cup cooked black beans
  • 1 cup diced tomatoes
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • 1 cup diced zucchini
  • 1 cup diced mushrooms
  • 1 cup corn
  • 1 cup shredded cheese
  • 2 tablespoon olive oil
  • 1 salt and pepper, to taste

Instructions

  1. Preheat your air fryer to 400°F.
  2. Cut the tops off the bell peppers and remove the seeds and ribs.
  3. In a large mixing bowl, combine the quinoa, black beans, tomatoes, onions, bell peppers, zucchini, mushrooms, and corn. Stir to combine.
  4. Stuff the bell peppers with the quinoa mixture, dividing it evenly among the peppers.
  5. Place the stuffed bell peppers in the air fryer basket in a single layer, making sure not to overcrowd the basket.
  6. Drizzle the stuffed bell peppers with the olive oil and sprinkle with salt and pepper.
  7. Cook the stuffed bell peppers for 20-25 minutes, until the peppers are tender and the filling is hot and bubbly.
  8. Sprinkle the cheese over the top of the stuffed peppers and cook for an additional 5 minutes, until the cheese is melted and bubbly.
  9. Serve the stuffed bell peppers hot, garnished with additional chopped fresh herbs if desired. Enjoy!
